Innovative technologies in craft confectionery production


 

The 29th April 2023, LNTU' graduate and confectioner technologist IrynaOLEKSYN gave a guest lecture as part of studying the discipline"Innovative technologies of food production and restaurant industry"for students of the educational and professional programme of the second(master's) level of higher education "Food technology and restaurantindustry. The event took place within the framework of the project"Acceleration of Innovation and Entrepreneurial Excellence in HigherEducation Institutions" (AccEnt Project).

During the lecture, the speaker familiarized studentsand lecturers with the intricacies of confectionery production and told themabout the stages of development and introduction to the manufacturing of newconfectionery products of improved quality. The expert emphasized that a pastrytechnologist must constantly follow the trends in confectionery production,learn new techniques, use innovative ingredients and skillfully combine them inrecipes to create confectionery products with new flavors that would be indemand among consumers with different taste preferences.
